Quick and easy churro cheesecake bites, combining a crispy churro shell with a creamy cheesecake filling.

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 cup cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Oil for frying

Instructions

  1. In a saucepan, combine water and butter; bring to a boil.
  2. Add flour and mix until a ball forms.
  3. Remove from heat, beat in eggs one at a time until smooth.
  4. Heat oil in a deep fryer or pot.
  5. Pipe churro batter into hot oil and fry until golden brown.
  6. Mix granulated sugar and cinnamon in a bowl.
  7. Roll fried churros in cinnamon sugar.
  8. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  9. Pipe cheesecake filling into each churro.
  10. Serve warm.

Notes

Use a large piping bag with a star tip for classic churro ridges and fry in small batches for even cooking.
