- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
- 1/2 cup dried cranberries or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter.
- Mix in the baking soda and salt.
- Add sugar, beaten egg, and vanilla extract, and mix.
- Stir in the flour until just incorporated.
- If using, fold in cinnamon, nuts, and cranberries or chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
For maximum sweetness, use very ripe bananas. Store wrapped at room temperature for up to two days or refrigerate for four to five days. Freeze for up to three months.
