- 1 pound chicken breast, sliced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and sliced zucchini to the skillet.
- Stir fry for an additional 5 minutes or until the zucchini is tender.
- Pour in soy sauce, and season with salt, pepper, and red pepper flakes if desired.
- Toss everything together and cook for another minute.
- Serve hot.
Notes
For extra savour, add a splash of low sodium chicken broth. Use a mandoline for even slices.
