A quick and satisfying skillet dinner featuring lean chicken and tender zucchini, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and sliced zucchini to the skillet.
  4. Stir fry for an additional 5 minutes or until the zucchini is tender.
  5. Pour in soy sauce, and season with salt, pepper, and red pepper flakes if desired.
  6. Toss everything together and cook for another minute.
  7. Serve hot.

Notes

For extra savour, add a splash of low sodium chicken broth. Use a mandoline for even slices.
