Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup vegetable oil

  • 1 tablespoon red food coloring
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, combine the vegetable oil, eggs, vanilla extract, and red food coloring. Mix well.
  4. Gradually add the wet ingredients into the dry ingredients until well combined.
  5. Pour the brownie batter into the prepared baking pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. While the brownies are baking, prepare the cream cheese frosting by mixing the softened cream cheese and butter in a bowl. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
  8. Once brownies are cool, spread the cream cheese frosting over the top.
  9. Cut into squares and enjoy!

Notes

Use a silicone spatula to scrape every bit of batter into the pan. For faster cleanup, line the pan with parchment.
