- 1 cup fresh cherries, pitted and halved
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup amaretto flavored syrup
- 1 packet ladyfinger cookies
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
- Almond slivers for garnish
Instructions
- In a bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- In another bowl, mix the mascarpone cheese with amaretto flavored syrup until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dip ladyfingers briefly into a mixture of amaretto flavored syrup and a little water, then layer them at the bottom of a serving dish.
- Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of fresh cherries.
- Repeat the layers until all ingredients are used, finishing with the mascarpone on top.
- Cover and refrigerate for at least 240 minutes or overnight.
- Before serving, dust with cocoa powder and garnish with almond slivers.
Notes
Choose ripe but firm cherries to ensure they hold their shape. For quicker prep, use pre-pitted cherries or frozen ones. Assemble in individual cups for faster chilling.
