Ingredients

  • 4 chicken breasts
  • 1 cup salsa verde
  • 1 cup pepper jack cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, cumin, salt, and pepper.
  3. Coat each chicken breast with the mixture.
  4. Grill the chicken for 6-7 minutes on each side or until cooked through.
  5. Top with salsa verde and pepper jack cheese, then close the grill lid for 2-3 minutes until the cheese melts.
  6. Remove from the grill, garnish with fresh cilantro if desired, and serve immediately.

Notes

Trim excess fat from the chicken for even cooking. Use pre-shredded cheese for convenience.
