Ingredients

  • Chicken thighs or drumsticks
  • Soy sauce
  • Brown sugar
  • Garlic, minced
  • Ginger, grated
  • Chicken broth
  • Water
  • Rice
  • Scallions, chopped
  • Cilantro, for garnish (optional)

Instructions

  1. In a bowl, mix soy sauce, brown sugar, garlic, and ginger to create the marinade.
  2. Add chicken to the marinade and let it sit for at least 30 minutes.
  3. In a pot, heat some oil over medium heat and add the marinated chicken. Sear until browned on all sides.
  4. Pour in the chicken broth and enough water to cover the chicken. Bring to a simmer.
  5. Reduce heat and let it cook for about 30-40 minutes until the chicken is tender.
  6. Meanwhile, cook the rice according to package instructions.
  7. Once the chicken is done, serve it over rice, ladle some broth over everything, and top with chopped scallions and cilantro if desired.

Notes

Use boneless skinless thighs for faster cooking. Reserve some marinade for basting for extra gloss. Low sodium soy sauce is recommended for salt control.
