- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup breadcrumbs
- Oil for frying
Instructions
- Boil the eggs: Place the eggs in a pot filled with cold water and bring it to a boil. Once boiling, cover and let them cook for about 10 minutes. Afterward, cool them down in cold running water before peeling.
- Prep the egg filling: Slice the boiled eggs in half lengthwise and gently scoop out the yolks into a bowl.
- Create your filling: In the bowl with the yolks, mash them well and mix in mayonnaise, Dijon mustard, Cajun seasoning, and a pinch of salt and pepper until smooth and creamy.
- Refill the egg whites: Carefully spoon or pipe the yolk mixture back into the halved egg whites.
- Bread the eggs: Dredge each filled egg in flour, dip it in the beaten eggs, and then coat with breadcrumbs until fully covered.
- Fry the eggs: In a frying pan, heat oil over medium heat. Carefully place the breaded eggs in the hot oil and fry them until golden brown, typically around 2-3 minutes on each side.
- Drain and serve: Once fried, place them on paper towels to drain excess oil before serving warm.
Notes
For a lighter version, skip the frying and simply sprinkle the deviled eggs with Cajun seasoning.
