  • 1 cup Biscoff cookie butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed Biscoff cookies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
  2. Melt the unsalted butter and Biscoff cookie butter together over low heat until smooth.
  3. Remove from heat and cool slightly for about 5 minutes.
  4. Add brown sugar to the butter mixture and whisk until smooth.
  5. Incorporate the eggs into the mixture and whisk until combined.
  6. Stir in the vanilla extract.
  7. Sift together flour, baking powder, and salt in a separate bowl.
  8. Gradually add the dry ingredients to the wet mixture, stirring gently.
  9. Fold in white chocolate chips and crushed Biscoff cookies until evenly distributed.
  10. Pour batter into the prepared pan and spread evenly.
  11. Bake for 25 to 30 minutes, checking with a toothpick.
  12. Cool in the pan for 10 minutes before transferring to a wire rack.
  13. Cut into squares and serve.

Notes

Use room temperature eggs for best results. If in a rush, microwave the Biscoff and butter instead of using the stove.
