A fast and forgiving recipe for juicy balsamic baked chicken breasts, perfect for busy weeknights.

Ingredients

  • 4 chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, honey, garlic, thyme, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the marinade over them.
  4. Drizzle olive oil on top.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
  6. Let rest for a few minutes before slicing. Serve with your choice of sides.

Notes

For crispier chicken, broil for 1-2 minutes after baking. Can marinate for 30 minutes to an hour for more flavor.
